I believe that it is a useless help in the game, which annoys more than helps in the race, if the player makes a wrong calculation in the amount of fuel or is in the limit between finishing the stint or not, leave without fuel without having to cancel the entry the pit. If the manager decides to stop for more than the programmed in the strategy, it would be more interesting if he used the button of the pit stop, giving the order for the driver to stop.
The entry into the pit should only be decided by the manager, or at most following the predetermined strategy, any other change related to the fuel, the game should not interfere.

I'm agree, because sometimes the game has made one of my cars make a pit-stop when he had 2 laps of fuel

It needs to be a setting. As long as you understand why the automatic pit stop is happening, you can plan for it, even if your fuel calculations are slightly off.

if you see your car pitting when you know it has enough fuel for another lap, just cancel the pit and manual re initiate it on the next lap, where is the issue? or are people just that lazy they don't want to do so much as move a mouse a few centimeters ...

Trying to cancel it isn't the problem. The problem are those instances when the game decides to pit so close to the entrance there's just not the slightest chance to cancel it or one of those days when you can click cancel as often as you want but the game is just going to pit. Although encountered the latter only with weather related pits so far and often it'll be one of those pit stops that won't put on the (recently) selected type of tyres as well.

Easy fix: keep the auto-pit feature but make it so that it cannot be activated if the car is a few seconds away from the pit entry. This will give you ~5 second period to cancel your pit stop without any interference. This would be much better than allowing the game to be able to make the last call which is unfair in my opinion

Every player in iGP goes through the premature auto-pit. This is because unlike almost every other racing management game out there, iGP does not have a feature allowing you to predetermine which lap you want to pit in (Motorsport Manager is also guilty of this). It just makes the game guess according to your fuel level remaining. I also go through this, especially when I'm in the middle of heavy KERS battles in the last 2 laps which I have to focus on and don't want to be watching out for my pit cancel button, but I have to.
It is simply not intuitive. Players want to be caring about battles on track and watching out for their times, gaps to cars, and what their rivals are doing, not watching out for when the auto-pit button flashes and having to cancel it. It is in no way the player's fault because who the heck wants to pit on the last lap when they have just enough fuel, but it manages to screw almost everyone at some point, and does not make for good quality of gameplay.
It is wonderful how almost every time the topic of auto-pit cancels or even wet weather comes up, there are overly tolerant yes-men defending the game's current interface saying "oh you lazy bum you should be watching the pit cancel button even if you're in the middle of an intense battle between 6 other cars in the last 3 laps!" or "oh you lazy bum you should check Wunderground! It is in no way wildly uncorrelated with the game's actual in-game weather *cough cough* and is thus a fitting stand-in for actual, proper, functioning in-game weather forecasting and monitoring!". Oh we should just adapt to the game's state-of-the-art interface no matter how un-intuitive or inconvenient it seems to the average, unsuspecting gamer; that's the spirit of true champions indeed!

Boh ... I'm not super expert but when I do the PIT I choose it in the fuel strategy, and in the race when the game activate the automatic PIT it's because the car really could not take another lap more.
So I do not understand the problem

In quite a number of instances, the auto-pit activates even when there's just enough, or even more than enough fuel to take the car to the next lap.
