Why the tires wear it's not the same as shown on practice? It's often less than shown but the performance is weak too. The hard tires performs much better than soft or medium ones. Why?

That's because the tyres are not calibrated correctly

Tyre Wear - In my experience the tyre wear shown in practice is correct. During the race the wear for the first lap of the stint will be the same as shown in practice but because tyre wear is not linear (it reduces as distance travelled increases) the average tyre wear for an entire stint will always be much lower than the wear indicated in practice.
Performance - As I understand it the practice session simulates the cars on new tyres with minimum fuel (enough to do one lap) so you would always expect the practice times to be faster than race laps because during the race when the tyres are new the fuel load is high and when the fuel load is low the tyres are worn.
Hard tyres - As Arianator says it's how they're calibrated. IMHO it's not a problem but I know many would like to see them recalibrated. If they are then we'll all just spend a couple of seasons working out what the new optimum strategy is.
