So I have a driver that has stats at 4 and 5. But a talent at 20. And then I have a driver with stats ranging from 5 to 7 with a talent of 9. And one with stats between 5-8 with a talent of 6. So which would be best to use. Go for the more talent and take a one stat loss around the entire board. Or go for the lower talent but overall a little higher stat across the entire stats

You will level up quick in the beginning and be able to train your drivers a lot. The T20 will fast be superior to the others. Start by training his stamina to 20 and weight to 51 for male or 46 for female (physical training). Then switch to train driving abilities until all stats there are 20 and lastly do the mental training.
It is possible that the lower Talent driver is quicker right now. Spend 3 tokens during the setup and then sacrifice one or 2 laps for one of your other drivers for a few races to see which is faster. That's what I do when I can't decide. I dominated my rookie season with two T2 drivers before I got higher talented ones.
