So, when I do my strategy before the race, I will usually have the drivers be on a certain set of tires until it reaches 60% wear. Now, in the race, tire wear is less, so around 50% is when they pit. I noticed after 50%, the pace loss is massive. Is this a good percentage to be pitting at, or should I pit later/earlier?
Note: Not talking about under or overcutting. Just based on tire wear.

Currently, I think, tires Start to lose temperature/performance <59% (So by the time they hit 50% the loss of pace will be considerable). Ideally that would be a good time to change. But, depending on race length and pit lane delta, that might not be the best idea strategically, if it causes you to make an extra stop.

Tyres have their first noticable drop at 65%, you should pit between that and 50% if you race no refueling, if you race refueling you can go 1 lap under 50 without losing much, but there are many factors, sometimes your opponents will be out with no DRS/stuck in traffic so really it is up to you when to pit considering what is happening on track
