Will there ever be a way to change how long contract extensions last?
I know it really doesn't make too much of a difference considering you could just end the contract at any time, but I always really liked doing contracts on a season-by-season (17/34 race) basis. It just made it feel much more organized.

As you say it doesn't really make any difference, it's a low priority at best. There are much more pressing things to be developing at this time. It is a nice feature for the obsessive-compulsive among us, though. :D

I don't find the 50 races unrealistic, in F1 contracts are often signed for 2 or 3 seasons (40/60 races) and that allows to only have a 10% inflation on wage per 50 races, when it was at least 5% per 17 races in the past.
