I am trying to change the number of days per week for the Anti-Nowhere league from two to three, going from a Monday and Thursday schedule to Monday, Tuesday, and Thursday. I have made the schedule change on the league edit/schedule page but with no effect. There is a note that changes do not take effect until the next season but we are currently in the gap between seasons so I was hoping this could work.

Unfortunately for your case this is how it works. Once the season has been generated, it can't be changed or re-generated. It's a lot of data to set up a season and manually adjusting it is not a service we can afford to offer with so few hands to go around and so much development work to do.
If this is an absolute must-have, you could leave the league and set up a new one, since you're between seasons. There wouldn't be penalties involved, but your car designs would be reset going into the new league.
