I have recently notice 2 significant changes.
1. When i view races via the mobile app, if i am on wifi, there is a regular lag. Very short so maybe like 2 seconds but it happens constantly so it ends up being hugely annoying. But if i switch to my mobile network, everything is smooth.
2. Navigating the website on desktop is like dighing rocks. Every click takes like 4-5 seconds to actually happen on screen. This has only happened in the last few weeks, i have never had any issues previously

When you are on Wi-Fi, is this the Wi-Fi connection at your home?
When you are on your desktop, is it connected via Ethernet cable or Wi-Fi?

I suspect it may be your Wi-Fi connection giving you a hard time.
I don't know if Internet Service Providers do something similar where you live, but you should have a gateway in your home that gives off the Wi-Fi signal. Unplug that device from the power source for 10 seconds, then plug it back in and let it get situated. It may take 5-10 minutes for your Internet connection to be online again.
You can also make sure that you aren't suffering from interference from neighboring homes' Wi-Fi signals (if you understand how to navigate your gateway's web page).
Also, I recommend performing an Internet connection speed test at www.speedtest.net. Share the results here. It's may help provide insight on what the issue is.

I have fibre broadband, no issues with any other uses of the internet. Speed is usually around 40mbps. I play online gaming and have no issues there

Old tricks to speed up Internet connections still work on modern computers. If you want to give it a try!
windows key & press R
Type regedit and press enter
Find
HKEY_LOCAL_MACHINE SYSTEM CurrentControlSet Services Tcpip Parameters
Add TCP1323Opts as a new “DWORD” Modify this value to 1 decimal.
Add MaxFreeTcbs as a new “DWORD” Modify its value to 65536 decimal.
Add MaxUserPort as a new “DWORD” Modify it's value to 65534 decimal.
Add GlobalMaxTcpWindowSize as a new “DWORD” Modify its value to 65535 decimal.
If you follow the instructions to the letter, I guarantee you will feel a positive effect, albeit small, on your Wifi Internet connection.
