Three times in the last five or six races my cars pitted on the last lap with no warning.  No opportunities to cancel the pit stops.  Cost me top fives each time, and possibly wins.

If cars are going to pit, there should be clear warnings the entire lap with plenty of opportunity to cancel.

A driver makes the decision to pit at the beginning of the lap before pitting. A pit light will start flashing on that drivers panel.
This should give you plenty of time to react.
The only time a driver would pit is if the tank has run out and there is no fuel usually a corner or two before the pit entrance.
When I say run out I mean completely empty and the commentator has said about it.

If you don't experience it in the way above please try to record the last couple of laps of your race and link it in this thread.

I will investigate this anyway, however if I don't reply it will be because I have not found any issues.

My point is that the light isn't flashing. I'm paying attention to cancel because I'm budgeting based on liters and running it pretty tight.  It must hit .99 or something in the last turn, and then trip the pit, and not give time to cancel.  That's how I've experienced it, anyway.
