I now have a red star driver in my team (she’s level 7, I’m level 6)

If I use that driver, would they automatically perform poorly due to the level difference?

No, that driver will not perform poorly.
The only "drawback" of having a red starred driver is that training him will go much slower. He will only progress 3% per training session.
