A question - was it a wise choise to change to a supplier with better data but a poorer "chance of success" (65% vs 74%)?

Just pic Murk, Seashells and Bridgerock. Might change in a future update, but at the moment they're the only sane choice.

but then should I ever check this bar - "chance of success" for any of the aspects (when hiring different staff members)?

I think if the change of succes is high then you can try to get them for a lower price per race (or higher price if you're negiotiating with sponsors).
