Doing my homework for the next GP (Belgium in my case), I looked at the prior Belgian race with the lap record. The winner of that race did 6 stints, pitting 5 times. Is that possible only during live races? I don't seem to have an option to add a sixth stint in the Next Race planning screen. Is that normal?

If you run out of fuel before the last lap the game pits you and refuels (and tires) using the last 5th stint amounts. Many use this to run a 6th stint. Or with the 2D viewer you can run an "unsecheduled stop" .

I see, thank you Leslie. So what do I have to do to exploit this? Just mark my 5 stints in the Strategy and that's it? Or do I have to tweak the Advanced strategy as well? (I don't have the option to participate in races live unfortunately).

I have yet to run six stints myself. I've seen it done in the Elite class of British Racing League as a spectator. It was one of the tracks that runs 60 laps.Some ran six 10 lap stints. You would have to calculate your fuel so that the stops would come every 10 laps in that case. Otherwise you would have to calculate what six stint lengths would be and if it did not come out even run one longer stint to make it come out even. It seems that working backwards from the last stint would be a good idea.
