There is a daily deal of purchasing extra engines for tokens.
If I were to purchase the engines and not use them all by the next engine restock, would they roll over or would I lose out?

If you have less than 20 engines, then you will lose out.

The game makes sure you will have 20 engines after every 10 races. If you have 24 engines before restock, you will have 24 engines after. It is not +20 engines, it is x engines + y engines = 20 engines.
