I'm new at this, what is the use of a heart that can go from 1 to 10 in pilot training?

It allows you to adjust how many times you want to train in one click. A typical session uses some health and gains you a bit of progress, but if you don’t have a race soon, and there is enough time for your drivers to heal, you can adjust how many times you want to train; it uses more health but gives you more progress. 10x usually clears a driver’s health bar, but I’m not sure about the rest. Just don’t overdue it, as then you’ll want to have health at or near 100% for the race.
